Instructions: Fry 6 slices of bacon in large pan. Remove bacon.
Saute 1 onion in bacon fat.
Add large potatoes, cubed (bite size). Simmer until potatoes are almost done.
Add 2-3 cups diced cooked chicken (optional), 1 can cream style corn, 1 can regular corn (drained), 1 can cream of chicken soup, 1 can cream of mushroom soup, 1 can cream of celery soup, 1 small carton chopped frozen green chili, and 1 pt. Half & half. Season to taste. Bring to boil. Reduce heat to simmer.
Add 1 small carton sour cream, 1 – 8oz. package velveeta, and crumbled bacon.
Keep on low heat to melt cheese. Do not boil.
